Luscious Lemon Bars

Lemon bars are always a big hit. One of my brothers favorite treats around the holidays. I made them for Thanksgiving and will again for Christmas. I decided to cut the bars out with a variety of different sized heart and scalloped circle cookie cutters just to make them extra special. Want to whip some up for your guests with a nice up of tea?

Luscious Lemon Bars

Ingredients:
2 1/3 Cups Flour
1/2 Cup Confectioners Sugar
1 Cup Butter, softened
6 Eggs
2 Cups Sugar
3/4 Cup Lemon Juice
1 1/2 Tablespoons Lemon Zest

Directions:
1.) Preheat oven to 350 degrees F and line a 9×13 inch greased baking pan with parchment paper to prevent the lemon bars from sticking.

2.) Mix 2 Cups of flour and confectioners sugar together. Blend in the softened butter until the mixture comes together and pulls away from the sides of your bowl

3.) Press the dough into your prepared pan and bake in preheated oven for 15-20 minutes or until golden brown around the edges.

4.) Beat together eggs, sugar, 6 tablespoons flour, lemon juice and lemon zest for at least 1 minute. Pour the mixture over baked crust.

5.) Bake the bars for another 20-25 minutes or until the lemon topping has set. Cool lemon bars.

6.) Slice lemon bars into squares or use cookie cutters like I did (spray cookie cutters with non-stick spray). You can then sprinkle the tops with powdered sugar..a little or a lot.
