A delicious, cheap and super easy dish from Mexico. This is my take on the dish using some things I already had at home. I was in a pinch for a side dish tonight for dinner. I love this dish its sooooooo tasty!
1 bag corn tortillas (I used mission as its what we had here)
1 28oz can enchilada sauce (I used green but you can use red or green)
2 cups shredded cheese (I used a Mexican blend)
1 4oz can diced green chilies
6 green onions sliced
-Preheat oven to 350
-Place corn tortillas in the bottom of a 9×13 inch pan (I crushed mine a bit)
-Pour can of enchilada sauce over chips
-Sprinkle over can of green chilies
-Sprinkle over sliced green onions
-Sprinkle over shredded cheese
Place in preheated oven and bake for 20-30 minutes
Remove from the oven let sit for about 10 minutes before digging in
You can garnish with more green onions, tomatoes and sour cream if you like
This is super tasty and I will be making this again. The photo is courtesy of me and so is the recipe. I don’t have a problem with you reposting. Just drop me a note and let me know and make sure to give my blog credit.
Please do give this a try! I know you will love it. You can add some shredded chicken, ground beef, steak… anything really make the recipe your own.
Blessings for a great evening!
